The butcher shop I work in makes chicken sausage. The texture of the sausage will be different from the pork sausage you're used to and the taste is a bit different. I prefer pork sausage but, chicken sausage is tasty. One suggestion if you do decide to make chicken sausage is to use ground thighs to keep the fat content up. Sausage made out of breast becomes too dry.
