You would need to check the specs of the particular screen. For the most part the screens should have some programmable character slots to work with.
Wow! Cool! So without doing any real research do you think this could be done with larger screens ei 20x4 or 40x4? I haven't really done any research on this topic but since you could create any combination I would think it's possible unless the screen has some physical limitations. When I get some time I will definitely try this. Thank you for posting!

Yes, it worked! I made it. Kids loved it.
First it depends on the power needs of the devices. How much voltage does each need? Is it AC or DC? If it needs more than 12V you'll have added difficulty. If not then a simple voltage regulator between the device and the battery will be fine. But make sure the regulator can provide the current the device needs. Also be mindful of the amount of power the devices will draw and how long they can run on the battery. You may find you'll have to change out the battery multiple times a week. Requiring multiple sets of batteries to rotate out and keep the system up and running. Once you have that all figured out you'll need the proper connectors to go from the converters to the devices. This will get pricey on you quick.

Just adapt home projects for the RV. Only thing that changes is where you are placing it and how you power it. People use Arduino over the Pi for many reasons. First and foremost is cost. Secondly most of these projects are coordinating only a couple of sensors. Things an Arduino can easily handle with no problem. The Pi costs more and is better suited to coordinate data from multiple Arduino projects and help control them.
You probably won't find your ideal materiel. All things break down over time. Some materials will be better than others but once they (as you put it) "break in" they lose that ability. All strings will stretch. Now you can get pre-stretched materials but then they lose a good bit of their elasticity (aka sponginess). What you'll have to do is research various materials and how they are woven together to get the characteristics you want. But over time they will wear out and will need to be replaced. Nothing last forever.

Why a cooler. Kind of a pricey purchase if your just going to destroy it. Get a cheap trash can with a lid or get a 5 gallon bucket with top from your hardware store.
You'll need to record each channel separately on the PC then use the correct software to help you properly mix the channels together again.
