Vegetarian Sushi for Beginners: How to Create a Basic Sushi Roll
Soy sauce is added because it is salty. If you can't tolerate it, replace it with some extremely salty water.
I am using this for a school project, and i'm really excited! I am about to try it!!
You might try the Daiya brand cream cheese...it's vegan AND soy free. As for the soy sauce substitute, that's a bit more problematic. The most simple thing I can think of is a mushroom liqueur. Any mushroom liqueur would work, as long as you get that salty, umami flavor (which is oddly similar to soy sauce). I hope this helps!
