I use one of those indestructible "roll" up keyboards with my kitchen PC. I built a set of shelves to hold my stuff and I bought a small stand to hold my keyboard, but I think your approach might be really nice for a lot of folks. I recently took an old laptop that after 4 years of use needed a fresh start, loaded Ubuntu on it. It cost me nothing, Installing ubuntu was easy and it works great wireless and I can run my cooking app in Firefox on it. I ended up installing the optional graphics driver from the graphics chip vendor, and it has the rotate 90, 180 degree feature. Computers in the kitchen, its a nice tool.
