The pennies back theoretically will work. Snails and slugs avoid copper as their mucus foot causes an electrical charge if they touch it. You can buy copper strips to do this. The only concern with the way the back is presented is that you would need to put all the pennies in a row otherwise the snail could pass between the coins if they are spaced out.
