How does the structural integrity change of the cookie dough when the recipe asks for the baker to chill it? Does this also result in a flatter cookie or does the cooler temperature of the fridge keep this from happening?

Chilling cookie dough will prevent the cookies from becoming too flat or spreading too much. Some recipes that contain a larger than normal amount of fat need to be chilled before baking!
