how do the cooking sprays differ from the oil. Are they healthy?
Cooking sprays are oils (of all varieties) that are often thinned with water and emulsified with lecithin (since water and oil don't mix). A few other ingredients are typically included. Some cooking sprays are under pressure and some contain propellants. I suggest using a refillable pump type sprayer if you like using cooking spray but if you prefer store bought make sure to read the label so you know what the 'oil' contains. Oil sprayers/misters are available in stainless steel or plastic (choose stainless!). Misto is a good brand.
