I found that this works well-
1) crank up the oven to about 450 F and let it pre-heat.
2) rinse and dry the fish
3) salt and pepper to taste
4) place fish in the oven
5) after about 10 min -depends o size and thinckness chack fish for doneness- should flake easily
6) a little bit of lemon juice and your done
something about the very high heat alows the fish to quickly cook and not dry out. This is a very simple method that works well with nost fish. The important aprt is to dri the fish of before putting it in the oven.
