My friend just forwarded me a link to the Bovine Myology and Muscle Profiling website. It's got a pretty impressive 3D visualizer for all the different layers of the cow flesh, an incredibly thorough how-to style video library useful for breaking down a cow, and is simply neat for anyone interested in biology, animals, or just plain weird stuff like this.

we had to learn this in class once, the guy held up a cut of meat and we had to give the IMPS 100 number for it. That was the most boring class ever. I dont know how many cows they wasted for that class.

If you really want to know where your meat was butchered at, check the establishment number and look it up on the http://www.fsis.usda.gov/Regulations_&_Policies/Meat_Poultry_Egg_Inspection_Directory/index.asp
