Take some handheld electric fans, take out the motor, and bring batteries.

I am working on one now too. biger the wheel the farther it will go for each axel rotation, the thinner the axel the more wraps you can get from your strin around the axel, the longer the string the more wraps you can get along your axel. the stronger your mouse trap, the more inertia to keep car going after its done powering.

Equip the biggest bloody mouse trap (or rat trap) you can get your hands on.  Also, you'll want as much tire grip as you can get, so put rubber bands on your tires.  Finally, you'll want it to have a good mix of acceleration and maximum speed so that your car will go fast in a hurry.

The legal way to do this.

Also, I forgot one last second thing: if possible, use 2 traps...

I suppose you could try to use different rubber bands, or on a more over-the-top approach, use a model rocket engine.

I could have told him that, but he never asked.

I would suggest that you take a long, light piece of wood (such as balsa) and attach it to the spring arm of the mousetrap, enabling you to wrap more string around the axle and get more range

If range is not a concern, take a light plastic, and make a vacuum formed covering for it to significantly reduce drag

You could also make it three wheeled, reducing the drag on the ground

In addition, check out these instructables (if you haven't already)
Foam Mouse Trap Car
Rat-Trap Car

And good luck with your contest!
