Honey use? Answered

I saw your answer to Suzanne43 re honey, however, here in Europe we don't have access to a wide variety of maple syrup and honey is frequently used in baking, however, as with better and worse grades of syrup in baking, there are better and worse types of honey and a quick resume of honey types would be useful to those of us living outside the US?

Honey is available in many types and is often listed with a flower, bush, or tree (neem, linden, clover, manuka) name, along with or under, the name 'honey'. Many generic brands contain a mixture of several honey types which takes away from the distinct tree, bush, or flower flavor. Also be aware that some 'honey' on the grocery store shelf isn't honey at all! Make sure to read the label!

The main categories of honey are: liquid, granulated, creamed, and chunky. They can be raw or pasteurized. If you choose to use honey in baking, liquid or granulated options are best.
