What do they mean when they say " 75% hydration" when giving the recipie?
It is a comparitive ratio, or bakers' percentage. Your total flour weight is alway 100% and then other percentages are compared against that.
100% flour - 1000g flour
75% water - 750g water
3% yeast - 30g yeast
1.8% salt - 18g salt
Hydration ratios also indicate how stiff or loose a dough will be. A 55% dough will be a lot harder to knead than a 75% dough.
