I want to build a 1/8" audio selector box with 4-5 inputs and 1 output (i.e. 4-5 audio sources and 1 set of speakers) and be able to toggle amongst the sources.
I bought a 2 Pole, 6 position rotary switch:2-Pole, 6-Position Rotary Switch
Will this work, or should I get something else?
other recommendations welcome!

You could do it that way, but what you want is what a lot of stereo-systems do anyway. If you can pick up an old Hi-Fi, you've got all the bits you need,
Related, though not exactly the same.

Although there are other ways to accomplish it, a DP6T rotary switch will do the job just fine.

It should, as long as it's non-shorting.  Most amps need a load when working so it would be best to only change the selector when the amps are off.
