I have a question about the one pot that you have above with the sliding paper clip showing the voltage changing from low to high. Should the voltage reading be higher to the negative side (black wire) of the pot, and lower as it is pushed to the positive side (red wire ) of the pot?

No. Electricity follows the path of least resistance between power and ground. So, when the two red wires are close together, there is far less resistance between them than the red and black wire. So, most of the voltage goes to the multimeter. As it moves away, the ratio changes and the voltage reading decreases.
