I would say that the same principles apply, with a heavier emphasis on human-centered design research and less on inspiration research.
Customer satisfaction is everything is service design and making sure that you are designing your service around their expressed needs (and observed needs) is paramount. This category is less about your own design expression and more about the unique way you see solutions to the problem(s) to be solved based on your thorough research of the target demographic.
Otherwise, I would say minus the physical prototyping (Instead do many iterations of a deep dive into the flow of the service) that the other aspects of the design process remain the same.
