Why do Pop Rocks explode in your mouth?

I just won a bag of Pop Rocks for the 4th of July and I was wondering why do they explode in your mouth.

They are basically lollipop crystals pressured at around 300 - 400 psi with CO2 gas. So, little high-pressure bubbles get trapped inside these crystals and as the melt in your mouth, it lets out the pressurized gas causing the "pop".
