Any micro controller can be used to control high voltage AC with a solid state relay (this, of course, is assuming you are just using the micro controller to turn it on and off). If you need to pulse width modulate it, you may be able to find a fan controller capable of being connected to a low voltage DC controller.

When using a microcontroller to control high-voltage circuits, it's a good idea to use opto-isolator. The opto-isolator will completely insulate your microcontroller from the high voltage circuit, and can avoid some rather nasty mistakes. Using both an opto-isolator and a relay would be the way to go. Just make sure the relay can handle the current draw for whatever it is you're switching on. When in doubt, but bigger relays.
