Yellow eggs are capacitors, probably tantalums.
Part with the glass window is probably a photo diode.
Little blue thing is a thermistor

tada! Humidity sensor :)

be advised, humidity sensors are affected by light level -- hence the goop is probably opaque. If it's an aqueous jelly it will change more slowly than the air humidity, slowly adapting to the new condition.

I bet it would be very similar to any generic humidity sensor, with the characteristic output curve being the main difference -- the operation should be very similar.
