Introduction: 100 Calorie Peanut Butter & Chocolate Popsicles
These tasty popsicles feature PB2, chocolate and plain flavors, and vanilla flavored coconut milk. Satisfy your sweet tooth for 100 calories, and get 5 grams of protein as well :)
Step 1: Gather Ingredients & Tools
Ingredients:
1 chocolate popsicle:
- 2 tablespoons of chocolate PB2
- 1/4 cup of vanilla coconut milk
- 1 small cookies & cream bar
1 peanut butter popsicle:
- 2 tablespoons of regular PB2
- 1/4 cup of vanilla coconut milk
- 1/2 tablespoon of cacao nibs (sweetended or unsweetended)
Tools:
- knife & cutting board/plate
- popsicle molds or Dixie cups and popsicle sticks
- bowl & spoon
- tablespoon
Step 2: Mix It Up!
Shake the coconut milk well and use a spoon to stir in the PB2. After the liquid is smooth, add the chopped candy or cacao nibs
Step 3: Pour Into Molds
Pour the mixture into the molds. For extra fanciness, add a few cacao nibs or candy pieces to the base of the popsicle. Freeze for a minimum of 4 hours. These molds were tricky to remove the popsicles from, but perhaps paper Dixie cups would work better.
Step 4: Eat Up!
Remove from the molds with the help of a butter knife, if needed. Enjoy your not-so-hard work!
Made following the recipes above, here's the nutritional info:

I found PB2 at my local store HEB, as well as Whole Foods. It's easiest to buy online, but if that's not an option, maybe try looking in the healthy/organic section of your local store.
