Learn how to make super easy peanut butter cookies with just 3 ingredients. Also, these cookies are gluten-free.

Supplies

Ingredients:

  1. 1 cup of peanut butter (240g)
  2. 1 cup of sugar (200g)
  3. 1 large egg

Equipment:

  1. Mixer, either a hand mixer or stand mixer with paddle attachment, or just use a wooden spoon
  2. Large bowl
  3. Sheet pan or cookie sheet
  4. Parchment paper or a silicone baking mat
  5. Wire cookie rack

Step 1: Make the Cookie Dough

Preheat the oven to 350°F/176C.

Add the peanut butter and the sugar to a large bowl and mix until combined. Then add the egg and mix. Just like that, the dough is ready.

TIP: Use natural peanut butter that doesn't have sugar added (but any peanut butter will work). You can also use chunky peanut butter.

Step 2: Bake the Cookies

Now take a bit of dough, I usually use a Tbsp as a scoop, and roll the dough in your hands and then place it on a sheet pan lined with parchment paper or a silicone baking mat. They won't spread out too much, but keep them about 2 inches apart.

Bake for 10 to 14 minutes until slightly golden brown.

Allow them to cool for a few minutes in the pan, then transfer them to a wire rack to cool completely.
