5 Minute Coconut Mochi!!!!
Intro: 5 Minute Coconut Mochi!!!!
No bake! No cooking! Mochi in 5 minutes!!!
This Japanese dessert is perfect for all occasions! You can also experiment with different flavors.
STEP 1: Ingredients
-1/2 cup sweet rice flour
-1 tablespoon (about 1/8 cup) sugar
-1/2 cup water
-1/4 cup unsweetened dessicated coconut
-Some more unsweetened dessicated coconut for rolling
STEP 2: Mixing
Combine the sweet rice flour and sugar.
After evenly mixed, add water. It should be a little watery.
Add the dessicated coconut. Mix thoroughly.
STEP 3: Microwave
Cover the bowl with plastic wrap and microwave on high for 1 minute.
Take it out of the microwave and flip mochi over (careful! It's hot!)
Put it back in the microwave for 30 seconds. (Resulting mochi should be very sticky)
STEP 4: Cooling (optional)
Mochi will be pretty hot. Let it cool. To speed up process, put it in the refrigerator.
STEP 5: Roll in Coconut
Cut the mochi into bite-size little pieces (or however big you want them)
Roll them around in the unsweetened dessicated coconut
STEP 6: EATT!!! YUMMMM
EAT YOUR MOCHI!!
It is super delicious and easy to make! Perfect for snacks, dessert, parties, or anything!!!!

This was great! I didn't have any coconut, but I instead added about a
tablespoon of cocoa powder about an extra half-tablespoon of sugar to
the mix. Once it cooled, I rolled it in more sweet rice flour with just a
little bit of powdered sugar to help with the graininess of the flour.
Straight powdered sugar is *way* too sweet, but the rice flour was a
little too rough-textured by itself.
Also, because I was careless
with my plastic wrap and let it dip into the batter, I had to get a new
piece for the second microwaving, as the original was near melting. All
in all, my wife and I were both very impressed with it!
Mochi is dense like a gummy bear, but soft and forgiving like a marshmallow.
