This instructables is about an special sunday recipe prepared especially in South India. English translation for this is Protein rich Pancake. It contains interesting ingredients and definitely its drool worthy. Would like say that its not a common daily recipe these days but its one of the traditional recipes of Tamil Nadu. Protein packed sunday breakfast.

Step 1: Ingredients

1) Raw Rice - 200 g

2) Moong Dal - 50 g

3) Toor dal - 50 g

4) Bengal gram - 50 g

5) Urad dal - 25 g

6) Red chilli - 12 nos (Adjust chilli quantity according to your spice level)

7) Onion Large - 1

8) Bottle gourd (shredded or chopped) - 100 g

9) Coconut - 20 g

10) Asafoetida - 1 tsp

11) Salt - As required

12) Water - 1ltr (water measurement is given to ensure consistency of batter, as its crucial part of recipe outcome)

13) Ginger - 1/2 inch size

14) Ghee - as per requirement

Step 2: 4 Dal

Measure all four dals accordingly add combine in a bowl

Step 3: Soaking

Add red chilli to raw rice and soak in water, parallelly soak all four pulses in another bowl, Soak them separately so as they would be grinded separately at different consistency. Soak for two hours

Step 4: Rice & Red Chilli

Put in mixie jar, blend nicely like a dripping consistency, their would be no need for adding extra water, you can use the water used for soaking.

Step 5: Blend Dal

Dal should be blended in coarse, not smooth it add taste and texture to adai. Now combine both

Step 6: Salt & Seasoning

Add salt as per requirement, put a tsp of Asafoetida

Step 7: Bottle Gourd

Peel of the skin, slice and cut or you can shred it using shredder, but if shredder they would little loss of bottle gourd as its major content is water, so chopping mini sticks would be preferrable

Step 8: Vegetables

Chop onions, ginger , coriander leaves and coconut cubes, mix it in batter, these are optional but add taste to dish

Step 9: Heat the Pan

So finally Adai batter is ready, On cast iron pan, pour batter and spread.. i gotta warn you that it may not be even as obtained in dosa recipe as there are solid objects like bottle gourd and other veggies. Poke 5 holes and add ghee(Clarified butter) to get crispy portions.

Step 10: Flip It

It quite sometime to cook it, so after 3-4 mins on one side, flip it like you flip a pancake. See how beautiful golden brown it is

Step 11: Thank You

Enjoy your Adai with Country jaggery or sugar or coconut chutney. I personally like country jaggery with this dish
