This is flavorful African style stew with tomatoes and beef. Such an easy and delicious meal that your family will love. This comfort food can feed the crowd!

I used dried spices and herbs for this stew, so it can be quickly prepared. It is about 6 portions, but you can divide it to smaller servings with rice or vegetables on the side.

African stew is a versatile dish! You can add chopped potatoes or carrots about 30 minutes before the end of cooking.

African beef stew is commonly served in Nigeria, Kenya, Ghana and other African countries. There are different variations of this stew across the continent. Try it at your home!

Supplies

large pot

400 g beef chuck, cut in cube pieces
1/2 cup olive oil
4 tomatoes, large
1 can tomatoes in juice whole or chopped / 400 g or 14 oz
1 cup water
1 tsp onion flakes or 1/2 chopped onion
1 tbsp garlic flakes or 3 minced garlic cloves
1 tsp thyme dried or fresh
1 tsp black pepper ground
1 tsp parsley dried or fresh
1 tsp paprika
1 tsp curry powder
1/2 tsp salt
1 cube beef bouillon

Step 1: Searing the Beef

Add 2 tbsp oil in a large pot or pan. Sear the beef from each side, about 10 minutes until browned.

Remove the meat from the pot or pan and leave aside.

You can use the same pot, if your meat is lean. Clean your pot or use another one.

Step 2: Spice It Up

Heat leftover oil in a pot and add all spices and herbs.

Cook, stirring, for one minute until fragrant.

Step 3: Cook Tomato Sauce

Add canned tomatoes in the pot and crush them with the back of the spoon.

Blend raw tomatoes and add them to the pot.

Simmer the tomato sauce for 30 minutes.

Step 4: Cook the Stew

Add bouillon cube and water to the sauce.

Bring to the boil and add meat back in the pot.

Cook about 40 minutes or until desired consistency.

Step 5: Enjoy

Let it cool a little and enjoy! Sprinkle some fresh herbs on top.

You can also serve it with rice, vegetables or pasta.

This is so good just as it is, with a slice of bread.

This African style stew can be stored in the fridge up to 5 days.
