Introduction: Amazing 3 Cheese Pizza

The first time I made this pizza, I was just using up the cheese we had in the fridge before it went bad. Mozzerella, brie, and feta (Trader Joe's brand) make for an interesting flavor and it all just goes together really well. This is now the standard pizza recipe I make, although sometimes I might add a different cheese depending on what we have.

Step 1: The Crust

1 1/4 cup warm water

2 tbs olive oil

1 tsp sugar

1 tbs sea salt

2 cups bread flour

1/4-1/2 cup AP flour

2 1/4 active yeast

Add ingredients, liquids first, to your bread machine and then set on pizza dough setting (or just dough setting). My machine has a 55 minute pizza dough setting, so around 10-15 minutes left I preheat the oven to 425 and line a sheet pan (our pizza stone broke a while back) with greased foil or parchment paper.

Once the machine is done, your dough is good to be used immediately. Roll it out to your preferred thickness and bake for 5-10 minutes.

Step 2: Toppings

-Pizza sauce

-Peppers

-Mushrooms

-Red Onion

-Pepperoni

-Mozzerella

-Double Cream Brie

-Feta

While the dough is becoming dough, I prep my toppings. For this pizza I add a ton of vegetables and then the cheese.

Step 3: Prep & Bake

After the initial baking of the crust, I add the sauce, vegetables, and pepperoni. Cheese goes on last because I don't want it to be hidden by the veggies. I want it to cook, get a nice brown on it before removing from the oven.

When all your toppings are on, pop back in the oven for 20-25 minutes. I've found baking at 425 lessens the chances of burning your crust.
