Intro: Apple Butter Pumpkin Pie

I present to you my Pretty Pretty Apple Butter Pumpkin Pie :) I have
never used sprinkles before and I got so exited when I started placing the stars on the whipped cream, that i could not stop myself from completely covering the cake with sprinkles..ha ha This is an easy pie but a little time consuming and the outcome is definitely worth all the effort. Hope you like it :)

STEP 1: Ingredients and Steps to Prepare Apple Butter

Ingredients required :

  • Apples - 3 medium any type
  • Brown Sugar - 1/2 cup
  • Water - 1/4 cup
  • Ground cinnamon - 1/4 tsp heaped
  • Ground Nutmeg - 1/8 tsp
  • Ground cloves - 1/8 tsp
  • Lemon Juice - 1 tsp

Steps required :

  • Peel and chop the apples.
  • Place all the ingredients in a pressure cooker, mix, put the lid and let it cook for 10 minutes(4 vissels).
  • Once the steam evaporates from the cooker, open the lid. The apples were already in the form of paste, so i did not need to mash it. Very little liquid was left in the cooker, so I cooked it for another 5 minutes to thicken it.
  • Let it cool, store it in a airtight container and refrigerate it till required.

STEP 2: Steps to Prepare Pumpkin Puree

  • Wash a small Sugar Pumpkin or Pie Pumpkin very well
  • Cut the top which holds the stem of the Pumpkin and cut the pumpkin into half
  • Remove the seeds and strings well (Do not throw the seeds as the seeds can be used so many ways)
  • In a pressure cooker pour 1 inch water, place the pumpkin pieces, put the lid and let it cook for 10 minutes (1 vissel)
  • Once the steam settles, open the cooker lid, remove the skin of the pumpkin which comes off easily, mix well with a spoon and place in refrigerator till needed.

STEP 3: Ingredients and Steps to Prepare Pie Crust

Ingredients required (Quantity below adjusted for only one pie crust):

  • All purpose Flour - 1 cup
  • Powdered Sugar - 1/3 cup
  • Salt - 1/8 tsp
  • Butter - 1/2 cup, very cold cut in small chunks
  • Ice Water - 2 tbsp

Steps required :

  • Cut the cold butter into small cubes and keep aside
  • In a large bowl + All purpose flour + powdered sugar + salt - Mix well
  • Add butter to above mixture and with the help of finger tips mix the butter into the flour till the butter becomes pea sized
  • I moved the mixture to a flat based bowl so that i could mix the mixture well
  • Add Ice cold water little by little till you are able to gather the mixture into a ball.
  • In the photo I have divided the dove into 2 because I made extra. The ingredient quantity mentioned above is for only one pie crust which is enough for this pie.
  • Wrap the Pie dove in plastic wrap and place in fridge for 30 minutes
  • After 30 minutes roll out the dove to 1/4 inch width and carefully place it onto a pie pan or tart pan
  • With a fork make dots on the pie crust so it does not fluff once baked
  • Place in fridge till needed

STEP 4: Ingredients and Steps to Prepare Apple Butter Pumpkin Pie

Ingredients required (Quantity below adjusted for only one pie crust):

  • Pumpkin Puree - 1 cup
  • Condensed Milk - 1 cup
  • Apple Butter - 1 cup I 9" pie crust, fitted in a 9" pie plate
  • Salt - 1/4 tsp
  • Eggs - 2
  • Ground Nutmeg - 1/4 tsp
  • Ground Cinnamon - 1 tsp
  • Ground Ginger - 1/2 tsp
  • Ground Cloves - 1/4 tsp

Steps required :

  • Preheat oven to 425 degrees
  • In a large bowl, combine together all remaining ingredients. Pour in the pie crust and bake it for 15 minutes
  • Reduce the heat to 350 and continue to bake for another 30 to 40 minutes or until no longer jiggly in the center
  • Allow to cool at room temperature for about an hour, then pop it in the fridge to cool completely

STEP 5: Presenting the Pie

  • In a bowl + cold heavy cream (1/2 cup) and whip till foamy + powdered sugar ( 1tbsp) and whip till stiff peaks forms
  • Pour the whipped cream into a zip lock bag fitted with flower nozzle
  • Decorate as desired and have fun with sprinkles :)
