Introduction: Apple Cider Pancakes

Keep doctors away with these yummy pancakes. They have a fresh apple taste and are dangerously delicious when paired with the homemade apple glaze. Eat these fluffy pancakes when they are still hot and get prepared to make this dish over and over again!

I was totally inspired by another Instructables user, Foodsnobs. She made Apple Cider Cinnamon Rolls which you can check out here. Her Instructable got me thinking, what else could I make with apple cider? Then it hit me (quite literally)! I was looking in the fridge for something to snack on and a large container of apple juice fell out of the refrigerator and hit my leg. At first I was thinking about my leg, but later on I came up with these apple cider pancakes. So this is my remix of her cinnamon rolls :D

Let's get started!

Step 1: Gather Ingredients

You will need...

Pancakes

  • 2 cups all-purpose flour
  • 2 tablespoons brown or white sugar
  • 2 teaspoons baking powder
  • pinch of salt
  • 1 1/2 cups plain yogurt
  • 1 1/2 cups apple cider*
  • 2 eggs

Glaze

  • 1 tablespoon butter
  • 2 tablespoons sugar (or less)
  • 3 tablespoons apple cider

You don't have to make the glaze but I highly recommend you do! Also, the apple cider pancakes can be more or less apple-y if you want. Just add more apple cider for a more distinct flavor, or less cider for a small hint of apple. However, adding more or less cider will change the consistency of the batter, so be careful.

This perfect fall breakfast will serve two people.

Step 2: Pancake Batter

1. Stir all of the dry ingredients together (the first four ingredients in the list). Then, in a separate bowl, mix all of the wet ingredients until no longer clumpy.

2. Mix the dry and wet together until smooth. The batter should be quite thick and form ribbons when poured.

Step 3: Cooking

1. Heat up a pan onto medium heat and coat with oil of your choice. My personal favorite would have to be coconut oil, but other oils, butter, and Pam spray work just fine.

2. Spoon out about a half cup of the batter onto the hot pan and use a spatula to smooth the pancake so that it cooks evenly.

3. When you see bubbles form around the edges, use a spatula to see if the pancake is done on that side (it should be golden brown like in the last photo). If it is, then flip the pancake over. Let cook on the other side until also golden brown.

4. Once done with your first pancake, put it on a plate and make more until you run out of batter.

Step 4: Glaze

This is totally optional but tastes great! Feel free to double or triple the recipe to feed more people.

1. Add all of the ingredients into a small bowl and microwave for thirty seconds.

2. Mix well and you're done!

Step 5: Eat!

This is my favorite part! Stack your pancakes and pour the warm glaze over them. Then enjoy them with a tall glass of apple cider.
