Introduction: Apple Coconut Crepe
An exotic splash of flavour to explode in your mouth... Isn't it appealing? That's what this delicious combo will bring you!
Step 1: Prepare the Crepe Filling
Your ingredients are:
- 1 apple, I use a Pink Lady.
- Enough water to cover the bottom of a microwave-proof bowl.
- An apple peeler.
- One tsp of honey or agave or sugar.
- A bowl.
These are to bake the apple.
You will need 2 tbsps of shredded coconut.
Step 2: Apple
Peel your apple and make a hole in the middle to remove the stem and the core. Fill the hole with the sweetener of choice and cover the bottom of the bowl with water. Then place the apple inside it.
Cook it in the microwave for 4 minutes. The water will steam the apple and it will be tender.
Step 3: Pancake
You will need:
- 2 tbsp flour of choice, I used oat flour.
- One egg.
- A dash of milk
Mix all the ingredients.
Step 4: Cook the Pancake
In a greased and hot frying pan, cook your pancake for one minute on each side. Try to spread the batter as much as possible, to make it larger, so you can wrap the apple and coconut filling.
Step 5: Remove the Cooked Pancake and Cook the Apple With the Coconut
Place your baked apple in the pan and mix the coconut with the water where you have cooked the apple. Then put it in the pan and break the apple into pieces. Mix it well.
Step 6: Fill the Crepe and Enjoy!
