Introduction: Apple Pie Keto Bite
These are small little treats, that are perfect to get you through that afternoon hump. At 3 o'clock in the afternoon I feel like taking a nap, zzzz... am I the only one who feels this way?
A Keto bite is a low-carb, sugar free, gluten free,HIGH FAT SNACK!! Perfect for getting some energy with out binge eating on something sugary and not healthy for you.
I have a secret for you, I am addicted to sugar, I blame it on genetics, my Grandmother was a fantastic baker and I loved visiting her and eating all the yummy desserts she baked up. I also love to bake and my kids love sweets but not everything I bake, so then I end up eating the majority of what I have made, eekkk... no good. But I don't feel guilty at all eating these little treats, knowing that they are filled with good fats and lack sugar that can spike my blood sugar. Also my father is Gluten sensitive so anytime I can avoid adding Gluten flour's to a baked good is a win win for me!

Step 1: Tools and Ingredients
Tools:
- Kitchen Scale
- 1 small saucepan
- 1 small skillet
- measuring spoons
- 1 plate
- spatula's or spoons
- potato masher
- silicon molds
Ingredients:
- 1 medium Apple (diced) 100 grams/half a cup
- Almond Flour
- Granulated Erythritol
- Cream Cheese - room temperature
- Butter - room temperature
- Cinnamon
- Lemon juice
Measurements:
100 grams diced apple
1 tsp. Lemon Juice
1/4 tsp. Cinnamon (split between filling and topping)
2 Tbs. Cream Cheese - room temperature
2 Tbs. Butter - room temperature
2 Tbs. Almond Flour
1 Tbs. granulated Erythritol
Topping:
40 grams Almond Flour (toasted for 2-4 minutes)
half of the 1/4 tsp. cinnamon mentioned above
2 tsp melted butter
2 tsp. granulated Erythritol
Step 2: Chop, Measure and Cook
Topping:
Weight your Almond flour, 40 grams, place in a small skillet to toast,
it takes about 2-4 minutes, be sure not to brown it too much or even worse, burn it! After the Almond flour has cooled a little in the skillet you can add your 2 tsp. of butter to the pan and it will melt :) Once the Almond Flour has cooled mix HALF of the 1/4 tsp. of Cinnamon into the Almond Flour and add 2 tsp. of granulated Erythritol then mix and flatten in the skillet, see the last picture, and chill for a few minutes in the freezer
Apple Filling:
Take your medium Apple and dice it into little squares, measure 100 grams, or about 1/2 a cup, Place your apples in a small saucepan with 1 tsp. of lemon juice and slowly soften the apples until you are able to mash them up, add water as needed so the bottom doesn't dry out and burn the apple pieces. Once softened enough, mash with a potato masher, it took me 25 minutes to cook them down to where I was able to mash them. Mix in the other HALF of the 1/4 tsp. of Cinnamon to the apples.
Tip: you can use Apple Sauce and save time, still cook it a little to get the juice cooked off, the final amount of cooked apple should be 1/2 cup.
Measure out 2 Tbs. Cream Cheese and Butter and place on a plate to come to Room Temperature.
In another small bowl add the 2 Tbs. of Almond Flour and 1 Tbs. of granulated Erythritol
Step 3: Mix It Up!
Cream the butter and cream cheese well, then incorporate it into the cooled,cooked and mashed apples.
Add the Almond Flour and granulated Erythritol last, let chill in the freezer for just a few minutes.
Step 4: Let's Make Them!
I have these adorable silicon molds, they are like these,
Place a heaping Tablespoon into each one, this recipe makes 6 Apple Pie Keto Bites
Then cut out a circle shape from the Topping straight out of the skillet, this is a 2" circle cookie cutter, if you don't have one, you can make the topping like a crumble and crumble it up and place on top of the Apple Pie filling (see last picture), push the topping down a little so it will stick to the filling.
Place in Freezer for 2 hours
Step 5: Eat Them!
Take out of the freezer and let sit on the counter top for a minute or two, then take out of the silicon mold and enjoy. I like to eat them while they are still frozen.
You can store the Apple Pie Keto Bites in the Freezer in a tight seal-proof plastic container for up to a month.
I am not a nutritionist, but did some calculation on a nutrition calculator and they came up with this.

Instead of the Erythritol it's better to use brown sugar, as the Erythritol has unpleasant side effects and as you use cream cheese calories is not an issue...

Hi Mara, where is the breakdown in nutrition info on your recipe for one serving. Carbs, fiber sugars etc. Your recipe sounds wonderful but until I know it will fit into my allotment of carlbs for the day, I can't make it.

Thank you so much for answering, I measured the apple keto pie and it came out as 28 grams and then I went to one of those calorie counter's like you did, thank you for introducing me to them and pretty much what you wrote above except it came out as 78 calories, I am trying to get it onto my recipe but having troubles getting the calculation on there, I might have to write it all out :) again thank you for your help!

Is there anything I could substitute for the cream cheese? Could I just double the butter?

Hello, you can do that or maybe you would like to substitute the cream cheese with coconut cream? I am not how they would taste with double butter, sounds very buttery to me :)
