Introduction: Apple and Banana Pancakes
This recipe is a great way of using up over-ripe bananas and apples, by blending them into pancake mix. They're delicious and trivially easy to make. So they're not just a tasty comfort food, but they also provide a good way of using up old fruit that might otherwise go to waste.
Step 1: Ingredients
These amounts provide about 10 pancakes, enough for a light meal for 5 adults.
- 3 cups flour
- 1 heaped teaspoon of baking powder
- large pinch of salt
Combine the above in a large bowl, then add
- 4 eggs
- 2 very ripe bananas, broken into chunks
- 2 very ripe apples, cut into pieces
- 1 cup milk
Blend the above together with a hand blender (ours) until no chunks remain.

Add extra milk as needed to make the mixture appropriately sloppy. The thicker the mix, the thicker the resulting pancake.
Step 2: Fry
Nothing complicated here, just ladle some mix on to a hot buttered frying pan. This one is a cast-iron pan on an induction cooktop at 7/9. You know it's hot enough when the butter steams instantly and then starts smoking.

Because I videoed this, I actually know how long it took: 90 seconds for the first side and 60 for the second. You can tell when it's ready to flip because the edges just start to set.
Step 3: Serve
We usually eat these just with maple syrup, but we're Canadians so we would wouldn't we. Have whatever you like on pancakes on these ones, they'll be good for sure.
These are also good just with the bananas. We've not tried other fruit but if both bananas & apples work others might too.

Hi, how much pancakes this recepie makes, will this be enough for a nursing mother, a teenager and a child?
