Introduction: Apple Pi Pie
This is a twist on a traditional apple pie. Instead of the filling consisting of thinly slice circles, the apples are shaped to resemble pi. (I did cheat this time by having the base be chopped up apple and then the top layer being the pi's)
2 tsp cinnamon
dash of allspice
2 tablespoons of lemon juice
1/4 cup of flour to thicken
about 1/2-1cup of brown sugar(depending on how sweet you want the filling)
Step 1: Mixing the Dry Ingredients
First off we want to mix together the cinnamon, allspice, flour, and brown sugar.
Step 2: Cutting the Apples
Cutting the apples into the pi shape proved to be pretty tricky. The best way I found was to first core the apple, peel it, cut the apple into thin circular slices. Stack the slices on top of each other to resemble the original apple shape and begin carving. The spare scrap pieces of the apple will be used for the base. Toss the apple slices in with some lemon juice so as to prevent oxidation. Ginger ale will also do the trick.
Step 3: Pre-cooking the Apples
Preheat the oven to 400F
Pour the dry ingredients in with the apples and evenly cover. Place the apples(only the scraps) into a pan and cook on low heat until mixture is soft and sticky.
Let cool to room temperature.
In a Pie pan, unroll one of the pie pastries. Pour the cooked scrap filling into the pie shell. Top with the Pi shaped apples.
Take the second pie pastry and slice into even lines, this will be the top of our pie. It will be woven in such a way to resemble a lattice.
Place in oven and bake until a golden brown crust has been achieved (about 15-20 minutes).
