Introduction: Avocado Cookies

Have you ever been in a situation where you're hungry but you're not sure whether you really want to cook or eat ? Here is a healthier and easy to make solution for you. If you like avocados, avocado cookies are really tasty and lighter snacks. To cook them doesn't require any expertise in baking or cooking. Cooking them from scratch only takes about 15-20 min.

The following steps will guide you step-by-step to make your tasty avocado cookies.

Step 1: Ingredients & Measurements

To make the avocado cookies you need the following ingredients:

- 1.5 cups of white sugar

- 1 cup butter, softened

- 3 medium size avocados

- 2 eggs

- 3 cups of unbleached all-purpose flour

- 1 teaspoon of baking soda

- 1 teaspoon baking powder

-1/4 teaspoon sea salt

- 1 teaspoon of flavor (optional and pick a flavor you like)

Step 2: Mix Avocado , Sugar and Butter

At first, preheat oven to 370-375 degrees Fahrenheit. Smashed the avocados using a spoon or a wooden spoon in a cup/bowl in a way that there is less bubble and set it aside. Beat sugar, butter, and smashed avocado together in a bowl with an electric mixer until you observe a smooth texture.

Step 3: Add Eggs

Add the two eggs to the smooth texture and beat the whole until completely incorporated.

Step 4: Add Flour, Baking Soda&powder and Salt

Put the measured quantity of flour, baking soda, baking powder and sea salt together in a separate bowl and mix them together. Pour that bowl into the bowl of the smooth avocado texture and beat the whole with an electric mixer until you can observe the complete mixture(no white spot).

Step 5: Ready to Bake !!!!

Once the different mixtures are done, Roll dough into walnut size-balls. Organize them in a way that they are two inches(2") apart all around in a non-stick baking sheet. If you don’t, the cookies will stick together, which

you want to avoid.

For about 10 minutes , bake them into the preheated oven until the cookies start to get the brownish color. From the bird view, the cookies should slightly look green like avocado. If you want them more brown you can leave them a few minutes longer.

Step 6: All Done !!!

It's all done, let the cookies cool for about 5 min.

    I would LOVE to try this! Btw is it more airy-crispy like a meringue,

    I would be really surprised by this cookie, except I discovered Pinterest two weeks ago. There are if not billions, at least millions of recipes for food from all cultures as well as life choice. Fortunately, I have always loved avocados! I would never have thought to use them this way. I have also used canned pumpkin, applesauce, and bananas as a substitute for oil. The pumpkin replaced egg and oil in a chocolate muffin recipe. I also love seeing everyday ingredients used. I live 50 miles round trip from a good market. Would hate to have to wait weeks to try this! Thank you.
