Introduction: Awesome & Easy Gluten Free Chocolate Chip Cookies
After years of trial and error, I have finally created a delicious Gluten Free Chocolate Chip Cookie recipe and I am so excited to share it! Not only do these cookies taste good, but they are quick and easy to make!
Yield: 24 Cookies
Prep Time: 10 minutes, Cook Time: 12 minutes
Step 1: Gather Your Ingredients & Set Oven to 350 Degrees
Ingredients:
¼ Cup Packed Brown Sugar
¼ Cup Sugar
½ Cup Butter (1 Stick)
1 Cup Gluten Free Baking Mix
½ Teaspoon Baking Soda
½ Teaspoon Vanilla
¼ Teaspoon Salt
1 Large Egg
1/3 Cup Semi-Sweet Chocolate Chips
Step 2: Cream the Sugar
Using a stand or hand mixer and a large mixing bowl, mix brown sugar, sugar, and butter for 2 minutes on medium speed. Scrape sides of bowl occasionally, as needed.
Step 3: Add Remaining Ingredients & Mix
Add all remaining ingredients, except chocolate chips. Mix for 30 seconds on low speed, then for 1 minute on medium speed. Scrape sides of bowl and mix for an additional 30 seconds if needed.
Step 4: Stir in Chocolate Chips
Add chocolate chips. Stir with spoon or spatula until chips are evenly dispersed.
Step 5: Roll & Bake
Roll into 1” balls and place on light colored ungreased 14” x 16” cookie sheet. Balls should be placed at least 2-3” apart. Bake at 350 degrees for 12-13 minutes.
Step 6: Cool & Serve
Remove from oven, and let stand for 1 minute. Remove cookies from pan and place on wire rack to cool. Best served warm. Microwave cooled cookies for 10 seconds before serving. Store in a sealed bag or container to maintain moisture. This recipe can be easily doubled to make a larger batch.
