BBQ Cakes & Muffins

Introduction: BBQ Cakes & Muffins

About: Born in Flushing Queens, NY, and growing up in Maywood, NJ., I learned my problem solving skills from my mother, my handy man skills from my father and my cooking skills from both of my parents. As a Cub Scout…

4 Medium/Large Oranges or Grapefruits

1 Box Cake or Muffin Mix

Prep Time: 10 Minutes

Cook Time: 15-20 Minutes

Note: If using cake mix you will be able to make more than four cake with one batch of mix. Muffin mix will make four. Your cake/muffin will take on a slight taste of the citrus you bake in.

Step 1:

Prepare the cake/muffin mix as instructed on the package and set aside.

Step 2:

Do Not Peel The Orange/Grapefruit!!!!!

Before cutting your fruit you want to use the half that connects to the tree {Stem} as your bottom.

On the opposite side of the stem cut off the top 1/3 of the orange/grapefruit and hollow out the fruit with a spoon. {This can be messy} and enjoy the fruit.

Note: When you remove the fruit there is going to be a center membrane were all the oranges slices meet in the middle coming down from the stem, do not rip this out take a paring knife and cut it out towards the bottom but not at the bottom to avoid cutting a hole.

Step 3:

Fill each of the bottoms of the fruit pieces 2/3rds of way with the cake/muffin mix and cover them with their matching pieces.

Step 4:

Place one closed orange/grapefruit on a sheet of foil and raise the foil up around the orange as tight as possible in the foil forming a handle. Remember to mark on the package what is inside with a permanent maker.

Step 5:

To cook your B.B.Q. Cakes & Muffins just place them directly on to the grill, campfire or in your fire pit and cook for 15-20 minutes.

Warning: Any food coming out of the fire or off the grill will be hot when you go to remove your food from the fire be sure to use something other than your bare hands to retrieve your meals like pot holders, a tea towel or tongs.

Wow! Does the cake have a flavor of citrus? This would be really fun with kids. In the summer I use to tell my kids no baked treats before midnight as using the oven would heat up the whole house. There would not have been any charcoal left for dinner as they would have been making BBQ treats. Hahaha....Great idea. Thank you.

Yes it does pick up a slight hint of the fruit it is cooked in, the oranges provide more flavor than the grapefruit. Time to stock up on more charcoal. Thank you.
