Introduction: Bacon and Tatos
This handy instructable will teach you the way to make Bacon and Tatos; a healthy breakfast for one or a side dish for two. This can also be made without the bacon, using olive oil rather than the grease.
Step 1: Materials Needed
For this meal you will need:
5 strips of bacon
2 potatoes of small size
2 cutting boards
2 knifes
A pan
Stirring utensil
Ms. Dash
Garlic powder
Step 2: Preparation of Ingrediants
Preheat the pan to a medium temperature. This was about 6 on my stove. Cut up the bacon and the potatoes (After washing them), making sure to use the separate knifes and cutting boards for health reasons.
Step 3: Cooking the Bacon
After making sure all the bacon is cut up, separate the pieces and throw them in the pan. When they begin to shrivle up and brown, flip or stir around the pieces. Let them cook until they are at the consistency you want, then move them to a plate and put the grease aside if you need to cook a second batch.
Step 4: Cooking the Tatos
Throw the potatoes in with any grease from the bacon. Toss, turn, and flip the tatos until they are soft and slightly browned. Season occasionally with the dash and garlic powder.
Step 5: Plate and Eat!!
After the potatoes are sufficiently cooked, add the bacon back into the pan to heat them up a bit. Lastly, Plate the meal and dig in!! I hope this instructable was helpful and delicious! Feedback is greatly appreciated, as this is my first instructable and I hope to make more in the future.

A variation on this I have cooked for years... Dice some red/green bell pepper and add to the potatoes for color and crunch, drain all on paper towels, dump in a casserole dish, top with shredded cheese (your choice!) and bake in a 325-350F oven for about 10 minutes to melt the cheese. As a diabetic, I justify the potatoes by adding the cheese to "up" the protein content! LOL Thank you for the simple, wonderful post.

You might try par-boiling the potatoes before you fry them. With a nice red or fingerling potato cut into cubes, it won't take too much time--place the pot of water on heat before you start. Cut the potatoes first, drop them in salted boiling water then proceed to cutting and frying your bacon.
To get a crisp shell without drying out your potatoes, you could par-boil the night before and refrigerate. But for a quick breakfast, I think that you will still save time if you par-boil the potatoes so the water does most of the work and frying in grease makes the outside crispy and takes the inside the rest of the way (Rinse under cold water before you drop them in the grease--dry them off as well so you don't get splatter)
