This delicious Egg dish is definitely one of my all time favourite. it is also an absolute classic in many South of France restaurant . It's a simple dish that is easy to make and taste great. Serve it with French bread toasted in olive oil for best result.

Step 1: Gather Your Ingredients

For that recipe you need :

10 capers
2 eggs
Good quality tomato sauce or passata.
Salt
Pepper
Good quality olive oil

Step 2: Coat and Season a Small Dish

Get a small dish that can contain two eggs and can go in the oven.

Then using a small kitchen paintbrush, coat the inside of the dish with olive oil and add a pinch of salt and pepper inside the dish.

Step 3: Add the Ingredients

Spread 2 table spoon of tomato sauce In The bottom of the dish.

Add your two eggs on top of the tomato sauce

Then sprinkle the capers around the dish over the eggs carefully avoiding placing them on the egg yolk.

Once done, add another spoon or two of tomato sauce around the eggs always avoiding the egg yolk

finish with a good table spoon of olive oil around the egg and you're done.

Step 4: Cook the Eggs

Place the dish (or dishes if you make more then one) in the oven at 340 to 360 degrees Fahrenheit and set the timer to approximatively 10 minutes.
as time can vary depending on the size of the eggs, make sure you keep an eye on the eggs and take them out as soon as the egg white is fully cooked.

Step 5: Enjoy

When cooked, take the eggs out of the oven and serve them straight away alongside 2 slices of toasted French bread. ( ideally pan fried in olive oil)
