Basic Island Coleslaw
Intro: Basic Island Coleslaw
Now that BBQ season is upon us I thought that a quick and easy coleslaw recipe might be in order.
This recipe will go great with some of the wonderful BBQ and smoked meat recipes featured in other instructables. After all whats a picnic or BBQ without coleslaw?

STEP 1: First Step
Gather your ingredients and tools. For the basic slaw you will need 1 medium to large green cabbage,
1 or 2 carrots, 1 1/4 cups mayo, 1/3 cup sugar, 1/4 cup vinegar. You can add other ingredients such as green peppers, red cabbage, onions, and or broccoli. Additional seasonings may be added to taste such as, whole peppercorns (what I use), dry mustard, celery seeds, or onion powder, etc.
Tools would include but not limited to: mixing bowls, measuring cups and spoons, whisk, and maybe a pepper mill (I used two spoons), and of course a laser cutter... well maybe that's a bit over the top but maybe it works for you, possibly a hand held grater would work as well.

STEP 2: Shredding Your Veggies
First remove the outer leaves from the head of cabbage and then I cut the head in half and begin shredding with the grater, now if you have a food processor or just a knife those work just as well

STEP 3: Sauciness, Sweet and Tangy
This step is where you can get the most creative, unfortunately lasers will not be used at all during this phase.
The base of our sauce is mayonnaise, 1 and 1/4 cups + or - to taste. Next is the sugar 1/3 cup or more if you like your slaw on the sweet side. followed up by the vinegar, I use apple cider, 1/4 cup or more if you like it tangy, you can adjust the viscosity by adjusting the amount of vinegar also, I like mine a little thicker.
Now is the time to develop your own signature taste, try adding dry mustard, onion or garlic powder, celery seed, cayenne pepper, or what have you.

STEP 4: The Finale
Stir the wet ingredients with the shredded veggies and let marinate in the fridge for awhile.

1 head finely shredded cabbage, toss with 1/4 cup sugar
Wait about 5 minutes until the sugar pulls some juice out,
Stir in enough mayonnaise to hold it together.
