In this Instructable, I will show you how to make zucchini bread. This easy amazing homemade zucchini bread recipe is probably the best I have ever had, and I don't throw around that term "best" willy nilly. It is slightly sweet and moist and the perfect way to eat your "veggies" haha. This quick bread from scratch recipe is simple to make if I can do it, you can do it. Let's get baking!

Step 1: Ingredients and Tools

Ingredients:

  • 1 1/2 cups all-purpose flour/plain flour (180g)
  • 2 tsp. ground cinnamon (5g)
  • 1/2 tsp. salt (2g)
  • 1/2 tsp. baking soda (2g)
  • 1/2 tsp. baking powder (2g)
  • 1 large egg
  • 1/2 cup oil (vegetable, canola, olive, coconut, etc.) (120ml)
  • 1 cup white granulated sugar (200g)
  • 1 1/2 tsp. vanilla extract (7ml)
  • 1/3 cup sour cream (80g)
  • 1/2 cup chopped pecans or walnuts (65g)
  • 1 cup grated zucchini (About 1 medium washed and dried zucchini) (150g)

Tools:

  • Whisk or hand mixer/stand mixer
  • Spatula
  • Bowls
  • 8x4 inch bread pan
  • Shortening or cooking spray for pan
  • Wire Rack

Step 2: Dry Ingredients

Preheat the oven to 325 F/162 C with the rack in the middle position. In a medium bowl sift or whisk together the flour, ground cinnamon, salt, baking soda, and baking powder.

Step 3: Wet Ingredients

Now in a large bowl, add the egg and whisk it. Then add the oil, sugar, and vanilla extract. Whisk those ingredients together and then add the sour cream and whisk it in. Note: You can certainly use a hand mixer if you like. I chose to only use a whisk for this demonstration.

Step 4: Zucchini Time

Add the dry ingredient mixture in half of it at a time until all incorporated. Now stir/fold in the chopped pecans or walnuts and the grated zucchini. I don't peel my zucchini but you can certainly do that if you like. Scrape the sides of the bowl as needed to make sure everything is added to the batter.

Step 5: Bake It!

Now take an 8x4 inch bread loaf pan and grease the sides with shortening or spray it with cooking spray. Then add about a tablespoon of flour and tap it all around so the flour covers the whole inside of the pan. This will make sure the bread doesn't stick to the pan when baking.

Pour in the batter and then bake the bread for 55 to 65 minutes until a toothpick comes out clean when poked in the middle. The top will be nice and golden brown. Allow the bread to cool in the pan for 10 to 15 minutes.

Step 6: Remove and Serve!

Now take a cake spatula or butter knife and move it around the inside of the pan around the bread to make sure it is loose. Then remove the bread from the pan and place it on a wire rack to cool the rest of the way.

Cut into it and serve up a slice. It is so yummy plain or with butter spread onto it. Enjoy!
