Introduction: Easy Beetroot Soup

Beetroot has lot of benefits and many of us does not like it's taste. Even kids does not prefer to eat beetroot.
It is rich in nitrates, folate, manganese and also rich in antioxidants. Because of its health benefits we can include in their diet by making these soups in liquid form. We can mix beet root with other vegetables and spices to enhance its taste.
Here I prepared beetroot soup. I used pressure cook method so that it's prepared in no time and nutrients can be preserved by this method.

Supplies

Ingredients

  • One and half cup chopped Beetroot
  • One small carrot
  • One chopped tomato
  • One onion
  • 2 Garlic cloves
  • Small inch Ginger
  • One Bay leaf
  • Pepper powder
  • Salt as per taste
  • Tea spoon coriander powder
  • Half teaspoon oregano
  • Two cups water
  • Little butter

Step 1: Add Butter and Saute Garlic and Ginger

Take little butter in vessel. Add 2 garlic cloves and small inch Ginger.

Step 2: Add Bay Leaf

Add one Bay leaf. Bay leaf imparts nice flavour to the soup.

Step 3: Add Chopped Onion

Next add one chopped onion and saute for few seconds.

Step 4: Add Chopped Beetroot, Carrot and Tomato

Next add about one and half cup chopped beetroot, one small carrot chopped and one chopped tomato.

Step 5: Pressure Cook

Add about two cups of water and pressure cook.

Step 6: Seperate Water and Veggies

After pressure is released. Strain the water from veggies. Remove the bay leaf. This water can be further used for soup preparation.

Step 7: Blend to Paste

Transfer the cooked vegetables to blender and blend to paste.

Step 8: Preparing Soup

Take the blended paste in a vessel. Add the strained water and cook the soup. (Water from previously pressure cooked veggies)

Step 9: Add Pepper Powder and Salt

Add pepper powder and salt as per taste.

Step 10: Add Coriander Powder and Oregano

Add teaspoon coriander powder and half teaspoon oregano and give a mix.
You can add cornflour paste as thickener by dissolving cornflour in little water. This is optional.if you prefer thicker consistency we can use cornflour.

Step 11: BeetRoot Soup Is Ready

Beetroot soup is ready to serve.
