Introduction: Breakfast Sandwich

Perfect for a Sunday morning when you have lots of time and customizable so everyone gets what they want!

Step 1: Gather All Your Ingredients and Pre Heat the Oven to 400 Degrees.

4 cups all-purpose flour, plus more for dusting
2 tablespoons kosher salt
1 1/2 tablespoons baking powder
1 teaspoon baking soda
2 sticks unsalted butter, cubed and chilled, plus more for spreading
1 1/2 cups buttermilk

Step 2: Make the Biscuits

Put the flour, salt, baking powder and baking soda into the bowl of a food processor and give it a quick spin. Cut the butter into small pieces and add them to the food processor. Process until the butter is incorporated and broken down into pea size pieces, about a minute. Cold butter works best. Add the buttermilk and process until the dough comes together. If you don't have a food processor don't worry, you can mix them by hand!

Step 3: Cut Out the Biscuits

Dump the dough out on a floured surface and knead it until it comes together in a smooth ball. It shouldn't take much kneading. Roll out the dough to about a 1 inch thickness and cut the biscuits using around biscuit cutter. You can re roll the scraps. You should get between 10 and 12 biscuits, depending on the size of you biscuit cutter.

Step 4: Bake the Biscuits

Place the biscuits on a baking sheet lined with parchment paper or a silpat baking sheet. Bake the biscuits for 20-30 minutes. Today mine took 22 minutes so check them frequently. They should be a light golden brown. Set them aside to cool slightly while you make the filings.

Step 5: Get Out Your Fillings

Gather your fillings. Obviously you will need eggs, but the rest depends on whatever you like. We have used bacon, sausage, cheddar cheese, American cheese, ham and smoked turkey. I found these beautiful farm eggs at the opening day of our local farm market yesterday. Today was a bacon, egg and cheese day!

Step 6: The Eggs

Everyone in my house likes their eggs prepared differently and they are all really good in this sandwich. Today my kids wanted their eggs scrambled. I poached mine. We have also made these sandwiches with fried eggs. While the eggs are cooking cook the bacon or sausage as well.

Step 7: Assemble and Enjoy

To assemble your sandwich split a biscuit in half and spread a little butter on the bottom. Place the cheese and meat on the bottom then add your eggs.
