Introduction: Breakfast Smoothie Bowl With Peanut Butter Granola, Vegan Friendly!

This smoothie bowl is loaded with vitamins and minerals. The peanut butter, nuts and seeds provide you with healthy fats to keep you satiated longer. And the oats have complex carbohydrates that help you avoid sugar crashes. Plus, it’s super tasty. And by making a couple substitutions you can easily make it vegan

Supplies

For the granola

For the smoothie

  • a few handfulls mixed frozen berries
  • a handful fresh or frozen spinach
  • milk (almond milk if vegan)
  • 1/2-1 tsp sugar

For serving

  • banana
  • fresh or frozen berries

Step 1: Prepare the Dry Ingredients

Chop the nuts. Measure out the seeds and rolled oats.

Step 2: Prepare the Wet Ingredients

Pour the peanut butter, oil and honey or syrup in a small pot. Put it on the stove on low to medium heat and mix until homogenous. Add the cinnamon and a pinch of salt if your peanut butter is unsalted. Remove from heat.

Step 3: Mix

Add the dry ingredient mix into the wet mix and carefully fold everything until the oats and nuts are all well coated.

Step 4: Bake

Spread the mix on a baking paper lined sheet pan and bake it at 160 °C (320 °F) for around 20 min, mixing halfway through.

Step 5: Prepare the Smoothie

Put the spinach and the frozen berries in the blender, pour enough milk to cover, I recommend also adding at least half a teaspoon of sugar. Blend until smooth. If your blender is getting stuck, add more milk.

Step 6: Serve

Pour the smoothie into a bowl. Add granola to one side and decorate your bowl with a sliced banana and some berries. Enjoy 😊
