Introduction: Brownies--No Butter or Fresh Eggs
I haven't been to the grocery store in over five weeks. While a lot of stuff is available from Amazon.com, walmart.com, schwans.com and misfitsmarket.com, I can't get eggs or butter (butter can be obtained for a $30. cooler/dry ice shipping fee). This recipe uses powdered eggs and coconut oil (which are easily available for shipping).
Preheat oven to 350 degrees F.
Ingredients
1 cup coconut oil (substituted for 1 cup softened butter)
1 cup white sugar
1 cup brown sugar
1 teaspoon vanilla
6 tablespoons egg powder and 7.5 tablespoons water (substitute for 3 eggs)
1 cup flour
2/3 cup cocoa
1/2 teaspoon baking powder
3/4 cup milk chocolate chips
3/4 cup semi-sweet chocolate chips
Step 1:
Blend coconut oil, sugars and vanilla in mixing bowl.
Step 2:
Prepare the powdered eggs. This is my first time using these. Put the powder in a cup and add water. Stir and crush the powder until there are no lumps floating on top.
Step 3:
Add the "eggs" to the sugar mixture and mix.
Step 4:
Combine flour, cocoa and baking powder. Gradually add and stir.
Fold in chocolate chips.
Step 5:
Spread batter in a greased (Pam spray) 13" x 9" pan.
Step 6:
Bake for 19 minutes at 350 degrees F.
Cool, cut and eat :)
