Introduction: Butternut Squash and Feta Cheese Croustades

This is me entry for the finger foods contest- these are great little canapes- delicious and sweet squash combined with salty feta cheese and earthy walnuts- Mmmm! You'll find croustades in the world section of your supermarket, but if you can't find them, the squash/feta/walnut mixture can also be eadily put onto peices of toast or ritz crackers or crostini if you like, its just a great flavour combination. Also, any type of pumpkin or squash can be used in place of the butternut, it's just the type i tend to use.

Butternut Squash, feta and walnut croustades (makes 24)

1 small butternut squash (or pumpkin)
Olive oil, salt, sugar and pepper
honey (optional)
50g feta
20g walnuts
1 pack of 24 croustades

1. Roast the butternut squash in the oven until completely soft- 1 hour under foil, ½ an hour without, at 200C. Mash, season to taste (add honey if not sweet enough) and allow to cool.
2. Fill the croustades with the mashed butternut squash, add a small bit of feta and a chunk of walnut, and plate.
