Introduction: CAULIFLOWER SALAD

Here is my simple recipe for a very hearty vegetable mix called cauliflower salad.

You will need:

4 carrots (I used 3 and a handful of baby carrots)

3 celery stalks

A medium chunk of cauliflower

A bottle of Italian dressing

½ a teaspoon of sugar or Splenda

Large mixing bowl / storage container

Step 1:

Wash all the vegetables and peel the carrots.

Also cut the ends off of the carrots.

Step 2:

Cut the cauliflower into very thin slices.

Step 3:

Split the celery stalks into smaller strips and cut them very thin as well.

Step 4:

Using a hand grater, use the slicer on the side to cut the carrots. You can also cut them into very thin pieces by hand.

They idea is to get an equal mix of vegetables but if you have one more than another or favor a particular vegetable no problem.

Step 5:

Mix everything together in a large bowl.

Step 6:

Drench the vegetables with Italian dressing, approximately 4 - 6 ounces.

Sometimes the Italian dressing can be overpowering so you can diminish the tartness by adding a half a spoonful of sugar or Splenda.

Mix thoroughly.

Refrigerate.

Step 7:

Serve cool.

I love this stuff. During meals. Between-meal snacks. The batch I made for this Instructable was gone within 24 hours.
