Introduction: Caleb's Special White Meat Chili


My first published Instructable!! Yay!!!( I have several others in the works)
Ok, not that that's over, lets get our grub on.

This is best to start after dinner to have ready for lunch or  dinner the next day.

Ingredients: (organic if available)
2 cans of black beans
2 cans of white beans
1 can of corn or half a bag of frozen corn
1 EACH- Red, Yellow, Orange, Green Peppers
1 Sweet Onion (must be a sweet onion, it will make a difference)
2 lbs of ground lean turkey breast
2 whole chicken breasts
1 lb of Mild or Medium Cheddar- I recommend Tilamook
1 packet of Chicken Taco Seasoning
1 packet of Ranch Dressing mix

Tools:
Knife- to chop vegetables, chicken breast and cheese
Cutting board
Can opener
Spoon/Spatula
Crock Pot
Food Processor is handy dandy too, but not necessary.

Method:
Add all the canned items in the crock pot. Mix in thoroughly 1 packet of the ranch dressing mix and the chicken taco seasoning. Finely dice the peppers and the onion and stir those in. A food processor is fantastic for this. pinch off chunks of the ground turkey and drop it in as you stir so you don't end up with one big ball-o-turkey at the end. Dice the chicken breasts to about 1 inch and add those. let the crock pot go on low over night or 6-8 hours. Cube up the cheese in small cubes and stir those in until they have completely melted and you can no longer distinguish the cheesed areas from the non-cheesed areas. This is critical. If you don't you can end up with a bunch of spongy chunks and chili that smells like burnt cheese. 
Allow to cook another 4-6 hours before serving.

ENJOY!

A great option to this is to add instant rice until all the water is absorbed about 30 minutes before you want to serve it. Then serve it with tortillas for burritos.
