Introduction: Calico Cookies
I can't remember why or how I started making these cookies, but they've become a thing around our house and I needed something to bring to my friends' bridal shower later today. We call them Calico Cookies because they are a mix of everything like our cat Sushi, who is a calico. Also, we figured no one would want to eat Sushi Cookies.
Step 1: BoM
1 1/2 cups of softened/melted butter
1 1/4 cup white sugar
1 1/2 cup brown sugar
1 tbs vanilla extract
2 tsp salt
2 tsp baking soda
1 1/2 eggs (1 whole egg, 1 egg white)
3-3 1/2 cups ap flour
1/4-1/2 cup chocolate chips
1/4-1/2 cup white chocolate chips
1/4-1/2 cup butter scotch chips
1/2 cup sweetened shredded coconut
Step 2: Butter & Sugar
Soften butter so it is easy to mix up with the sugars.
Step 3: Egg & Stuff
Add salt, eggs, and vanilla extract to the buttery sugar and mix well. Then add baking soda and flour and stir. Add more flour if after the first 3 cups your dough seems a little too wet (or don't).
Step 4: Add Calico
I usually start with a 1/4 cup of the chocolate, white, and butterscotch chips and then add more as I stir and see the distribution. I've never tried the coconut before but I liked the texture it gave.
Step 5: Bake
Roll little balls (maybe slightly flatten them if you have a stiffer dough) and spread them about an inch apart. Bake at 375 for 8-10 minutes.
Remove from oven and let cool on a wire rack.
Step 6: Enjoy!
Keep the cookies in an airtight container (after they cool).
