In this Instructable, I will show you how to make candied pecans. This easy candied pecans recipe is perfect for the Holidays or any time of the year. Eat them as a snack as is, or put them on top of salads, or whatever you like. Also known as glazed pecans, sugared pecans, or caramelized pecans, whatever you want to call them, they are tasty! And incredibly simple to make, if I can do it, you can do it. Let's get started!

Step 1: Ingredients and Tools

Ingredients:

  • 3/4 cup of white granulated sugar (150g)
  • 1/4 cup of brown sugar (55g)
  • 2 tsp. ground cinnamon (5g)
  • 1/2 tsp. salt (2g)
  • 1/4 cup of butter (56g)
  • 2 1/2 to 3 cups of pecan halves (247 to 297g)
  • 1 egg white from a large egg

Tools:

  • Bowls
  • Whisk
  • Spatula
  • Sheet pan
  • Silicone baking mat or parchment paper

Step 2: Dry Ingredients

Preheat the oven to 275 F/135 C.

In a medium bowl, whisk together the white granulated sugar, brown sugar, cinnamon, and salt. If you don't have brown sugar you can use all white sugar.

Step 3: Sugar Paste

Time to make the sugar paste. Add the egg white from one large egg into a large bowl and whisk until nice and frothy.

Then add the sugar mixture. Melt the butter in the microwave or in a pot on the stovetop just until barely melted and not hot. Pour that into the mixture and whisk well until you get a sugary paste.

Step 4: Coat and Spread

Now add the pecans to the sugar paste and with a spatula fold and mix until well coated. If you like you can add even more pecans, just depends on how much you want them to be candied. 2 1/2 cups to 3 cups of pecans works great, but you could add even more if you wanted, like up to 4 cups, for less coating.

Take a sheet pan and line it with parchment paper or a silicone baking mat. Then spread out the pecan mixture into an even 1 layer.

Bake in the oven for 10 to 12 minutes.

Step 5: Bake, Stir, Bake, Stir

After 10 to 12 minutes, remove the pan and then stir and flip the pecans. Spread them out again, and then back in the oven. Repeat 3 more times, for a total of 40 to 45 minutes of baking. Keep an eye on them so they don't burn.

Remove them from the oven the final time and allow them to cool to room temperature. It will take anywhere from 30 minutes to an hour.

The candy coating should be crunchy, and the pecans will be roasted. Pretty awesome right?

Step 6: Serve!

After they have cooled it is time to serve them. Put them in a nice serving bowl or in little individual packages for gifts, whatever you like. These are so addicting, I bet you can't just eat one of them! Enjoy :)
