Intro: Caramel Filled Chocolates

This is an easy Instructable that will show you how to make delicious homemade caramel filled chocolates. 

What you will need:
A double broiler setup, I am using a medium sized pot with water in the bottom and a glass bowl on top
Spoon
Silicon ice cube trays, you could use plain squares but its much more fun to use shaped trays.

Chocolate
Caramel (I suggest making your own caramel but if your feeling lazy you could use pre-made caramel)

STEP 1: Melt the Chocolate

In order to make sure the caramels will setup and not melt at room temperature you want to heat the chocolate as little as possible here is how I suggest to do it:

Setup your double broiler and let the water in the bottom come to a boil

While the double broiler is heating up cut up the chocolate so that it will melt faster

Once the water in the double broiler starts to simmer turn off the heat and add the chocolate

The residue heat from the water should melt the chocolate, if it does not melt all the way you can turn the heat on a little to help the melting process.

STEP 2: Assemble Chocolates

Add a spoonful of chocolate to each of the molds 

Use the spoon (or your finger) to move the chocolate around the mold so it covers the bottom and side walls of each compartment

Then put a spoonful of caramel into each of the compartments

Finish by adding a layer of chocolate over each caramel

STEP 3: Let the Chocolate Set Up

If you are patient you can let the chocolate set up at room temperature, however I am not patient and suggest putting the chocolates into the fridge or freezer to speed up the process.

Once the chocolates are set up gently push them out of the tray

You can use this same process to make chocolates with many delicious centers such as nuttella, peanut butter or nuts. The possibilities are endless!

could you use the molds to make shaped truffles?

I think it would depend on what kind of truffles you're making. If it's a soft outer shell I don't think it would hold its shape very well. However, you could do something like a lindt truffle with a solid shell and soft center.
This is great! Especially considering that most chocolates I can't eat, since they're normally manufactured with Peanuts and nuts.

Side question, where did you find the skull ice cube tray?
Skull ice cube tray was at the Dollar Tree around Halloween.
you let the caramel set up first and lay it in there
My caramel was pretty soft but if it is a thicker caramel I would warm it up a little
