Introduction: Caramel Stuffed Snickerdoodle Cookies
Hi guys. So today we're going to be making some delicious caramel stuffed snickedoodles. And no there aren't any snickers involved.
Supplies
1 1/4 cup flour
1 teaspoon cream of tartar
1/2 cup softened butter
1/4 teaspoon salt
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
1 larger egg
1 teaspoon vanilla extract
10-13 caramel squares
Cinnamon sugar coating
1/4 cup granulated sugar
1/2 teaspoon cinnamon
Step 1: Combine Your Dry Ingredients
In a large mixing bowl, combine your flour, baking soda, cinnamon, salt and cream of tartar.
Step 2: Beat the Butter and Sugar
In a separate bowl, using a stand mixer or handheld mixer beat the sugar and butter until it's light and fluffy. Next add in your egg and vanilla.
Step 3: Step 3
Now you can add your flour mixture about half cup at a time. Mix it all until well combined. Repeat this step until you have cookie dough*.
*Tip: if your dough isn't looking like dough, just make and add more of your flour mixture*
Step 4: Chill Your Dough
Wrap your dough with plastic wrap and chill your dough for anywhere between 30 minutes to 2 days. I chilled mine overnight. (If you're short on time, you can put it in the freezer for10 minutes)
Step 5: Add Your Caramels
Ok here comes the fun part. Get your dough and scoop about a tablespoon of it and roll it into balls. Flatten each ball and place your caramel in the middle. Reseal the ball and roll back into a ball.
Step 6: Sugar Mixture
Mix cinnamon and sugar for the topping
Stir your rolled balls into the sugar mixture to your heart's desire.
Step 7: Bake Them!!!
Place your cookies on cookie sheet and bake them at 350° degrees for 10-12 minutes for larger cookies, for smaller cookies bake them for 9-11 minutes.
If you want, you could make a caramel sauce and add any toppings to your snickerdoodles, for example, I added almonds
