Introduction: Cheesecake Easter Eggs
This is an Instructable of a dessert that's quickly becoming an Easter tradition! I have made these cheesecake easter eggs for two years now. I came across this post and absolutely loved them:

Step 1: Ingredients
Here's the list of ingredients that you'll need:
6 hollow chocolate eggs (mine were purchased from See's Candies, see here)
For the cheesecake:
- 5oz cream cheese (softened)
- 1/4 cup powdered sugar
- 1/2 tsp lemon juice
- 1/2 tsp vanilla extract
- 1/2 cup heavy whipping cream
For the yolk:
- apricot jam
- piping bag

Step 2: Preparing the Chocolate Eggs
Place a chocolate egg in your hand and grip it using a paper towel. Using a serrated knife, lightly trace the jagged edges you want for your chocolate egg. Trace over it again, cutting deeper into the chocolate egg, and remove the top when you have completely gone around the top of the egg.

Step 3: Making the Cheesecake
Combine the cream cheese, powdered sugar, lemon juice and vanilla extract in a mixing bowl. Beat on high until the mixture is smooth and fluffy, which takes about 3-4 minutes. Set this aside.
Pour the heavy whipping cream into another mixing bowl. Carefully whip it until there are stiff peaks.

Step 4: Filling the Eggs
Using a pipet bag, pipe the cheesecake into the hollow chocolate eggs. Fill them all the way to the top, leaving a shallow dip in the center.
Step 5: Adding the Yolk
Using two spoons, carefully fill the hole in the center of the cheesecake egg with a spoonful of apricot jam. You can see in some of the pictures that at first we didn't fill the cheesecake eggs enough and had to add another layer of cheesecake.
After you've filled all of the eggs, put the eggs in the refrigerator to set and chill before serving.

Step 6: Arrange
You probably noticed that in the photos there are only 5 eggs. One of them broke in the process so we found another way to use it.
We made a small nest using fake grass and placed a yellow Peep in the middle!
