Intro: Cherry Mash Candy

I stumbled upon this recipe a few weeks ago and I'm so glad I did. This candy is so rich and delicious, if you take a batch to the office prepare to bring home an empty platter! The recipe I found called for cherry flavored frosting but I wanted to use real cherries.

This candy is perfect to make for Christmas or Valentines day.

STEP 1: Ingredients

To make this candy you will need:

2-1/2 bags powdered sugar (5 lbs)

1 can sweetened condensed milk (14 oz)

1 jar of maraschino cherries (10 oz)

2 pounds melting chocolate for candy

vanilla, 1 tablespoon

1 cup pecans, chopped

2 sticks butter, softened

STEP 2: Mix Cherry Filling

Remove the cherry stems and place cherries in a blender with the juice. Blend until liquefied. In a large mixing bowl blend together 1 can sweetened condensed milk, 2-1/2 bags (5 lbs) powdered sugar, 1 tablespoon vanilla, 2 sticks softened butter and liquified cherries. Mix well and cover the bowl with plastic wrap, place in the refrigerator for 30 minutes.

At this point, you could leave the filling in the fridge for a day or 2 until you want to dip the candy in chocolate.

STEP 3: Melt Chocolate

I've discovered a foolproof way to melt the chocolate without overheating it.

You can purchase dark chocolate or milk chocolate- I went with the milk chocolate.

In a large crock pot, pour 4 cups water. Place a metal bowl in the crock pot and pour the chocolate discs in the bowl. Turn the crock pot on low heat. Stir occasionally until melted, then stir in 1 cup chopped pecans.

STEP 4: Freeze Filling

While the chocolate is melting, roll spoonfulls of the cherry filling into balls about 1" in diameter. Place them on a plate and freeze for 20-30 minutes.

STEP 5: Cover With Chocolate

Stick a toothpick in a frozen cherry ball and cover with chocolate. Set on wax paper. Repeat with remaining cherry filling.

When the candy has set, place in an airtight container.

Is it OK to use walnuts instead of pecans in this recipe
I tried cutting this recipe in half. I must have figured wrong somewhere because I can't get the balls to hold their shape for a minute. Should I add some powdered sugar to give it some volume?

It depends. If the mixture is too dry, add a small amount of liquid. If the mixture is too moist, then add more powdered sugar. Don't forget to put the balls into the freezer for a few minutes before you dip them into the chocolate.
I would double the cherries as there was not a lot of cherry flavor. I also used peanuts instead to be consistent with Sioux City, Iowa's Palmer's Twin Bing. Otherwise, very good and similar!

I've made this recipe the past several years to go in my Christmas candy baskets for family and friends. When I make candy recipes for Christmas I always double them because I need a lot to give away. The first year I used this recipe I did exactly that... Two words: Mis. Take. This recipe makes a crapload of cherry mash! Don't get me wrong, everyone loved it and appreciated having so much to enjoy and share, but I have to repeat; doubling this recipe makes a _lot_ of candy. If you're making this just for you and a couple of family members you could easily get away with halving this. Or you can make the full recipe and have enough for the whole year!

Thank you for sharing this! I've been trying to figure out how to make cherry mash since I can't find boxed cherry frosting or cherry chips anywhere. I am going to make this now and my daughter will be surprised and happy!!

Ooooooooooh gotta make! Wonder how coconut would be in these?!

That's funny you mention coconut...I adapted this recipe from my mothers coconut candy recipe because my oldest daughter does not like coconut. Plenty of people do love the coconut though!

side note: Keep in mind you won't need as much powdered sugar if you substitute coconut for the cherries because you won't be mixing in any juice.

Id love to try this but I doubt the filling will ever make it to the chocolate.
